What I’m about to say might sound bad for someone who claims she’s a “culinarian”, but it’s the truth.
One of the meals I get the most excited for are ground beef tacos.
I’m talking about the store-bought Old El Paso packages you can whip up in no time. My mouth is watering just thinking about them. They’re My Other Half’s favourite too – we get so excited for Taco Night! I must say, however, that when he makes tacos, he adds a lot of veggies in with the ground beef – onions, peppers and mushrooms. It makes for a much better – and slightly less indulgent – meal.
I recently came across this recipe on Canadian Living. I love shrimp, I love curry and I definitely love tacos, so I was excited to try these out, at least in an effort to be less lazy (although it’s so tempting to just grab the trusty Old El Paso box!)
They were good , but I made a few changes. I didn’t grill the shrimp – I pan-fried them. It didn’t make a huge difference. I sautéed the peppers, which was fine too. Also, I didn’t use the food processor, so my “salsa” was much more chunky.
I should mention that soft-shell tacos just aren’t tacos to me. I realize they’re more authentic, but soft-shell makes them seem more like fajitas than tacos. Whatever.
