My Favourite Go-To Quinoa Salad with Honey-Lime Dressing

This is a bold statement, I know… but this is probably my favourite quinoa salad ever.

I love it for three reasons. First, it tastes amazing. So amazing that I would choose it over a bag a chips (yes, it’s that good). Secondly, it’s super-fast to make. Like, under 15 minutes. Gotta love it. Lastly, it’s versatile – you can add whatever veggies you want or have.

Whenever I need a quick meal, this is what I whip up. It’s so easy to grab everything you need and make the dressing while the quinoa is cooking.

Go-To Quinoa Salad

My Favourite Go-To Quinoa Salad with Honey-Lime Dressing

Yield: 6


1 cup quinoa
1 cup cherry tomatoes, halved
½ cup frozen corn, thawed
½ cup frozen edamame, thawed
2 green onions, sliced
½ cup black beans, drained and rinsed
1 avocado, diced (optional)
Honey-Lime Dressing
3 tbsps oil
2 tsps grated lime zest
3 tbsps lime juice
1 tbsp honey
½ tsp chili powder
salt & pepper, to taste


Rinse quinoa and drain. Cook with 2 cups of water until no liquid remains (bring to a boil and let simmer, covered). Meanwhile, make the dressing. When the quinoa is cooked and cooled, mix with veggies and dressing and serve. The salad is best cold.

Remember, you can add whatever veggies you want. Some grilled peppers could be nice, or some cilantro. Whatever you have on hand!
