Summer Carrot & Feta Salad

I love unconventional salads.

That’s probably why so many salads like my broccoli one or this buffalo chicken quinoa one show up on the blog. Lettuce can just be… boring. Why not switch it up?

Carrot Feta Salad

This salad is terrific for summer – light, refreshing and delicious. The perfect companion to any BBQed meal.

I love shaving carrots. That’s strange, right? Ever since I got a really sharp vegetable peeler, I find it fun. And I don’t have to haul out my food processor (although it would be faster).

And obviously I love cheese of any sort. And the crunch from the pumpkin seeds. Yum.

Summer Carrot & Feta Salad

Ingredients

1 lb carrots
12 sprigs of fresh cilantro
1/4 cup pumpkin seeds
1/4 cup crumbled feta
Dressing:
1/8 tsp ground cumin
2 tbsps orange juice
1 tbsp vegetable oil
1 tbsp lemon juice
1/2 tsp ground coriander
1/2 tsp honey
Salt and pepper, to taste

Directions

Shred carrots thinly, either using a vegetable peeler or food processor. Whisk together dressing ingredients. Combine carrots, seeds and cilantro and drizzle with dressing. Toss to coat. Top with feta and serve cold.
