Chipotle BBQ Cocktail Meatballs

By Wednesday, October 9, 2013

Wishing a very happy 91st birthday to my Poppy today! Love you!

Everybody likes a good meatball.

And no, I’m not referencing Snookie and Deena from Jersey Shore (but yes, I admit to watching that show). I’m talkin’ about the best hors d’œuvres ever!

I love it when I’m at a party and they’re serving cocktail meatballs. Even if they’re not homemade. Just yum.

This is yet another dish I made for my Stella & Dot party a while ago. They’re super easy (basically make your favourite burgers and roll the meat into balls and bake) and you could use any sauce, although I highly recommend my spicy chipotle BBQ sauce from the best pasta ever (found here).

Also, I should add that this sauce is probably the most versatile sauce ever. I use it as BBQ sauce, pasta sauce, dipping sauce, marinade, salad dressing, or add it to a dip. It’s amazing no matter what. And spicy!

Chipotle BBQ Cocktail Meatballs

1 pound ground beef
1 egg
1/2 cup bread crumbs
¼ finely chopped onion
1 tsp Worcestershire sauce
½ tsp garlic powder
1 tbsp red wine vinegar
1 tsp Dijon mustard
Salt & pepper, to taste
500 ml Chipotle BBQ Sauce

Mix all ingredients (except the BBQ sauce) in a bowl. Roll by heaping tablespoon into small meatballs. Place on lined baking sheet and bake at 350 degrees for 30 minutes. Let cool a bit, but keep the oven on. Transfer to a greased glass baking dish and pour BBQ sauce over top. Bake for 15 minutes at 350 degrees. Serve with toothpicks.

Yes! Whenever someone has these meatballs I will fill an entire plate and eat them with no shame. Thanks for the recipe!
