Dinner for one!

Basically.

So as I’ve mentioned, My Other Half’s job requires him to travel a lot. Way more than he used to. So most weeknights I am cooking for one. Part of the joy I get from cooking is feeding and pleasing others, so I generally keep things pretty simple when it’s just for me. This recipe is so straight-forward, healthy and delicious. And it’s ready in five minutes.

You might imagine I am getting a little bored of spaghetti squash by now! I am, kind of… but I also will still keep eating at least one a week. It’s nice to have quick ideas like this to fall back on when I’m not in the mood for spaghetti squash.

Another thing I’ve been eating a lot of is salmon, because it’s so good for you AND it’s delicious. I normally bake it in something simple like BBQ sauce and maple syrup or mustard and maple syrup. Yum!

I mentioned that one thing I am not willing to give up in my new diet is cheese. It is my lifeline. Yes, even more so than wine. We regularly indulge in cheese/charcuterie nights on weekends and it’s heaven.¬†Quesadillas (even healthy ones like these) are my sneaky way of having extra cheese during the work week.

These are so easy! The perfect meal for one.

Chicken, Avocado & Tomato Quesadillas

Yield: 1 as a main, 2 as a snack

Ingredients

2 flour tortillas
1/2 tomato, sliced
1/2 avocado, sliced
1/2 cup shredded cheese (I used white cheddar)
1 chicken breast, cooked and sliced

Directions

Place tortillas in a greased frying pan and sprinkle with cheese. When starting to melt, add chicken, tomato and avocado. When the cheese is completely melted, carefully fold over the tortillas and flip the quesadillas. Serve with hot sauce, salsa or sour cream.
