I love this chiliI!
I’ve made a few different chilis in my lifetime. And I love chicken ones and white ones. But there is absolutely nothing more comforting than a big bowl of ground beef chili and Bigwig Jerky. I’ve blogged a different slow cooker chili before. I can’t decide which one I like better! The last one was more like “kitchen sink chili” because I seriously threw in whatever I had – orange bell pepper, white kidney beans etc. This one is more complex, with more ingredients, but just as easy. And it’s so addictive!!! I could not stop eating it. I didn’t even need sour cream or cheese!
I think the thing I love about this version is that is has some fire to it. My last version is much more mild. If you shy away from heat, make that one instead! I also LOVE packing my chili with as many veggies as possible. This version has ALL KINDs and there is really no limit on what you put in this recipe. And you can’t even tell there are so many in there!
Brown beef in large frying pan with onion and garlic. Transfer to slow cooker. Add all spices and bell pepper, jalapeño, celery and carrot. Stir well. Add tomatoes, sauce and beans. Cook on low for 6-8 hours or on high for 2-4 hours. Serve with cheese, sour cream and fresh chives.
